SALTED CARAMEL POPCORN RECIPE
Soon there will be a chill in the air and so many reasons to cozy up on the couch for a festive movie. Add the taste of Fall to your movie night popcorn with this easy-peasy recipe. Makes about 16 cups of caramel corn.
4 bags microwave popcorn (butter or regular, your preference)
or ½ cup unpopped popping kernels.
1 cup salted butter
1 cup light brown sugar
⅓ cup light corn syrup
1 + ½ - 1 tsp kosher salt (divided)
2 Cups Nuts (optional)
Preheat oven to 300°
Line a large baking sheet with parchment paper or a silicon mat. Set aside.
Pop the popcorn kernels using air popper or microwave popcorn according to bag instructions. Place popped kernels in a large bowl and set aside.
In a small saucepan melt butter, brown sugar, corn syrup, and 1 tsp. salt together over medium heat. Bring to a boil. Boil for 4 minutes without stirring.
Optional: Add in 2 cups of nuts to the un-coated popcorn, before adding caramel, if desired.
Pour caramel mixture over popcorn and stir to coat evenly.
Pour the mixed popcorn onto a lined pan. Sprinkle remaining salt over the top (½ tsp. - 1 tsp. Depending on your personal preference) and place in the oven.
Bake for 30 minutes, stirring every 10 minutes.
Allow popcorn to cool on a parchment lined counter. Serve and Enjoy!
